I was feeling the need for something fresh and light the other evening, so decided to whip up this summer salad. It was an invention off the top of my head, and I think if I was going to do it again I’d probably leave the feta out. Although it was still tasty, we ate it with grilled chicken and the feta just felt a bit unnecessary! The lime dressing goes perfectly with the avocado and the chilli gives it that extra kick. It’s a really fresh option for summer. We didn’t have any small chillis so I ended up using a pointed pepper (basically a giant chilli pepper) which didn’t add that much spice and I think it would be even better with a small red chilli. But the basic recipe is really simple and tasty, play around with it at home and let me know what you think!
1 romaine lettuce
A handful of santini tomatoes
1/4 of a cucumber
About 50g of feta cheese
For the dressing:
1 red chilli
Small bunch of coriander
A good glug of olive oil
Salt and pepper
Chop the avocado, tomoatoes, cucumber, feta and a few lettuce leaves and place them in a large salad bowl.
Blend the lime juice, olive oil, chopped chilli and coriander together and then season with salt and pepper, to taste.
Add the dressing to the salad ingredients and toss together.
That’s all there is to it! Really easy and only took me about 10 minutes to prepare!
